Ingredients
- Cannoli dough
- 1 cup all purpose flour
- 1 tbsp sugar
- 1/8 tsp salt
- 3 tbsp cold butter, cut into small pieces
- 1/4 cup dry white wine
- 1 egg yolk
- 1 egg white
- For the filling:
- 500 gr. Mascarpone cheese
- 200 gr. fresh cream
- 3 tbsp powder sugar
- 2 cups strawberries (cut into pieces)
Instructions
- Reserve the egg white for sticking the cannoli shells. Line a baking tray with a sheet of parchment paper.
- In a food processor blend together all dough ingredients. Mix until you get a smooth dough. Spread a piece of plastic wrap on a flat surface and place the dough in the center. Wrap the plastic around it and press the dough. Flattening the dough will mean less rolling later. Let it rest in the fridge for 30 min. If you have less time, put it in the freezer for 10 min, while you are making the filling.
- Roll the shells: Sift flout on a flat surface. Using a rolling pin, roll the dough until it is very thin (3 – 4 mm). Use any glass or small ball that has 9 cm diameter. Depending on the cannoli tubes you have, measure the size as shown on the “How to” slider.
- Cut rounds, then roll each round to get oval shape. Wrap around cannoli tube. Use a little egg white to brush the overlapping edges to seal it. Repeat with the rest of dough. The stainless cannoli tubes help the dough keep its shape while baking. Don’t let the egg white touch the tube.
- Set the prepared cannoli, seam side down, on the prepared baking sheet. place them at least 5 cm apart to allow them cook evenly. Place the tray in the preheated oven to 190-200 C. Bake for around 8-10 min.
- Allow the cannoli shells to cool completely before handling them. The metal tubes can burn your hands. Gently grasp the shell in the palm of one hand and pull the metal tube out with the other.
- Preparing the filling: With an electric mixer mix mascarpone cheese and fresh cream for 1 min. Add the powder sugar and strawberries.
- Fill the cannoli shells so that the cream runs through the whole shell.
- Keep in the fridge.
- Serve by sprinkling powder sugar and decorate with fresh berries.
- Note: If you want crispy cannoli, fill them just before serving.
