Ingredients:
1 package (14.3 ounces) red velvet sandwich cookies (such as Oreo Red Velvet Sandwich Cookies)
1 package (8 ounces) cream cheese, softened
12 ounces white chocolate chips or melting wafers
Red sprinkles or crushed red velvet cookies for decoration (optional)
Directions:
Place the red velvet sandwich cookies in a food processor and pulse until they are finely crushed into crumbs.
In a mixing bowl, combine the crushed red velvet cookies with the softened cream cheese. Mix until well combined and a dough forms.
Using your hands or a small cookie scoop, roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
Place the baking sheet in the refrigerator and chill the truffles for at least 30 minutes to firm up.
In the meantime, melt the white chocolate chips or melting wafers according to the package instructions until smooth and creamy.
Using a fork or dipping tool, dip each chilled truffle into the melted white chocolate, making sure to coat it completely. Allow any excess chocolate to drip off.
Place the coated truffles back onto the parchment paper-lined baking sheet.
If desired, immediately sprinkle the tops of the truffles with red sprinkles or crushed red velvet cookies before the chocolate sets.
Once all truffles are coated and decorated, place the baking sheet back in the refrigerator for about 15-20 minutes to allow the chocolate coating to set.
Once the chocolate is set, transfer the Red Velvet Oreo Truffles to an airtight container and store them in the refrigerator until ready to serve.
